D.O: Méntrida

Vineyards: More than 40 year old head-trained vineyards on siliceous soils (Garnacha), and 15 year old espalier vineyards on sandy soils (Syrah).

Grape varieties: Garnacha 80%, Syrah 20%

Processing: Each variety separately. Prefermentative maceration at cold temperature. Temperature controlled fermentation with 15 days of maceration. Malolactic fermentation in barrel. Non-stabilized, unfiltered.

 

Aging:each variety separately. 12 months in 400 and 500 litres French oak  barrels, and 1,500 litres fudres.

Production: 17,000 bottles of 0.75 L.
