Bodegas Canopy is located in the town of Camarena, 40 kilometers from Toledo and 70 kilometers from Madrid. This makes it easy to visit from Toledo and nearby Madrid.
It is during the harvest season when all our efforts bear fruit. This is the origin of wine.
It is in the different stages of the harvest, such as the two selection processes that we carry out—one at the vineyard and another one when the grapes arrive at the winery—, when we actually start making our wines. We crush the grapes in small 1,500-liter vats to extract all the aromas and nuances in the gentlest way possible. This is the origin of Canopy wines.
We begin with pre-fermentation cold maceration, to draw out everything our old grape vines have to give. Then we gently pump over the juice to gradually shape our wines.
After alcoholic fermentation and gentle pressing, they go into large barrels that can hold 500 and 700 liters, respectively, as well as 2000-liter foudres, where the barrels will round out the wines, helping them gain complexity.
We only use large barrels and foudres made of French oak to bring out the best of each vineyard parcel in terms of character and uniqueness. Depending on the wine, they will remain in barrels from 3 to 18 months, and they will be regularly tasted to determine their progress. At the end, after gentle filtration, they will spend some time in the bottle where they will complete the aging process.
